Vegetarian Quinoa Chili

Vegetarian Quinoa Chili

1 15 oz can black beans, drained and rinsed well
1 15 oz can red kidney beans, drained and rinsed well
1 cup quinoa
1 28 oz can crushed tomatoes
1 1/3 cup vegetable broth, divided
1 zucchini, chopped
1 onion, diced
3 cloves of garlic, diced
3/4 tbsp chili powder
1/2 tsp cinnamon
1/2 tsp paprika
1 tsp cumin
diced avocado (for serving)

Cook quinoa according to package directions. In a large pot, simmer garlic, diced onion, and chopped zucchini in 1/3 cup vegetable broth for 4 minutes. Add beans, cooked quinoa, crushed tomato, 1 additional cup of vegetable broth, and spices. (This chili is not spicy! If you prefer spicy, double the amount of spices and you might want to add some jalapeño.) Cook on low to medium heat for 8-10 minutes. Top with sliced avocado for added healthy fats! Add salt and pepper to taste. Enjoy!
