It’s Foodie Friday! We’ve got an easy, super tasty dinner recipe for you! You definitely don’t want to miss this one! A tiny bit of chopping required, but the results are worth this small effort. A few every day ingredients are all that you need!
Parmesan Roasted Shrimp with Crispy Potatoes and Broccoli
Makes about 3 servings
1/2 pound potatoes, diced into 1/2″ cubes
1 head broccoli, about 3 cups, cut into small-ish florets
1 pound large shrimp, peeled and deveined
1 large clove garlic, finely minced
Zest of one lemon, finely grated
1/4 cup grated Parmesan cheese
Lemon wedges, for serving
Preheat the oven to 500 degrees with a large rimmed baking sheet inside.
Place potatoes and broccoli in a large bowl and toss with a few tablespoons of olive oil, salt, and pepper. Carefully spread in a single layer on the preheated baking sheet.
Roast for 20-25 mins, tossing a few times, until tender and browned.
Meanwhile, marinate shrimp in a bowl with lemon zest, about a tablespoon of olive oil, the garlic, and a little salt and pepper.
Once potatoes and broccoli are tender and browned, push them to one side of the baking sheet and spread shrimp in a single layer on the open side. Sprinkle everything with the Parmesan cheese and roast for 5 mins more until shrimp are pink and cooked through.
Serve with lemon wedges if desired.
