It’s Foodie Friday! And we’re grilling things on sticks again! We can’t get enough of this week’s Spiced Chicken Skewers with Peanut Sauce. These skewers are great as a main course paired with some grilled vegetables or as an appetizer at your next party. Any leftover peanut sauce tastes delicious drizzled over veggies, some noodles, and any cooked protein like shrimp, chicken, or steak for an impromptu Thai style peanut salad.
Spiced Chicken ingredients
2 pounds boneless skinless chicken breasts or tenders, cut into strips
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon ground ginger
1/2 teaspoon salt
1/4 teaspoon garlic powder
Peanut Sauce ingredients
2 teaspoons sesame oil
2 cloves garlic, finely minced
3 teaspoons fresh ginger, grated
3 tablespoons Thai sweet chili sauce
2 tablespoons hoisin sauce
½ cup water
¼ cup creamy peanut butter
Small handful chopped salted peanuts for garnish, optional
If using wooden skewers, soak in water for about 20 minutes to prevent scorching. Heat grill to medium high. Skewer the chicken strips and lay on a platter or rimmed baking sheet.
Combine the spices in a small bowl and sprinkle over chicken skewers, turning them to get spices on all sides.
Combine all peanut sauce ingredients except chopped peanuts in a medium bowl and whisk until smooth. Have faith: water and peanut butter can mix. Garnish with chopped peanuts if desired.
Oil grill grates. Grill skewers over direct medium high heat for 2-3 minutes. (Skewers will release easily from the grates when they’re ready to turn), then grill another 2-3 minutes until cooked through. Serve with the peanut sauce for dipping.
