We have a super fun and fancy but easy dish for you today! Strawberries with Honeyed Ricotta and Balsamic Glaze make a great dessert or appetizer and is perfect for a party. You only need 5 ingredients! Your friends don’t have know what a cinch it was to make, that can be our little secret.
Strawberries with Honeyed Ricotta and Balsamic Glaze
Serves 4-6 as an appetizer or dessert
1/2 cup balsamic vinegar
1 pound strawberries (about a quart)
1 cup ricotta cheese (we used part skim)
2 teaspoons finely chopped lemon zest
A scant tablespoon of honey
Fresh mint, chopped, for garnish (optional)
In a small saucepan, heat balsamic vinegar over medium low. Simmer lightly for 8-12 minutes, until it has reduced by half and thickened so the consistency is more like syrup. (It gets thicker as it cools.) Stir frequently as it gets close to prevent scorching. Set aside to cool.
Add ricotta, lemon zest, and honey to a mixing bowl and whip with a mixer on medium until smooth and combined, about 2 minutes.
Transfer ricotta to as small bowl for serving and drizzle balsamic glaze on top. Sprinkle with chopped mint if desired and serve with the strawberries for dipping.
