You will not believe how simple this salad is and it’s unexpectedly delicious. Sweet watermelon and salty feta make for an irresistible combination! And with just three ingredients it’s a snap to throw together. We’re almost embarrassed to call this a recipe. Try it this weekend!
Salty Sweet Watermelon Feta Salad
8 cups cold watermelon, seeded and cut into bite size pieces
4 ounces crumbled feta cheese
Small handful fresh mint leaves, finely sliced (chiffonade, see tip below)
Place watermelon in a large serving bowl and top with feta and mint. Toss gently and serve immediately.
Tip: the easiest way to chiffonade the mint is to remove large leaves from the sprigs, stack them, then thinly slice the stack. This method also works great for thinly slicing other herbs like basil or leafy greens like spinach.
