Peach Gazpacho


It’s Foodie Friday! Summertime, summer recipes! Here we are again with the tomatoes! (Can’t stop. Won’t stop.) They are just soooooo good this time of year! Today we have a twist on a classic…it’s a Peach Gazpacho! This is the perfect recipe to use up tomatoes that are overripe or have blemishes. Ask for “seconds” at the farmers’ market to track down these discounted, still tasty goods!

Peach Gazpacho


4 large tomatoes
2 medium peaches
1 large bell pepper
1/2 small onion
Juice of 1 lime
3 tablespoons olive oil
Salt and pepper
Avocado for serving, optional

Dice tomatoes, peaches, bell pepper, and onion. Combine with lime juice and olive oil in a large serving bowl. If you like your gazpacho super smooth, working in batches, puree the entire tomato mixture in a blender. If you like it a little chunkier (our preference), puree about half of the tomato mixture. (We used an immersion blender right in the serving bowl for this step to save dishes.)

Return pureed gazpacho to serving bowl and add salt and pepper to taste. Stir well. Chill at least 2 hours or up to overnight. Serve cold, topped with diced avocado, if desired.
