Mediterranean Style Baked Eggs

It’s Foodie Friday! We have an easy make ahead breakfast/brunch meal for you today, with a Mediterranean flair! Roasted red peppers and feta add tons of flavor to plain jane eggs.

Mediterranean Style Baked Eggs

Ingredients
Olive oil for greasing the dishes
8 eggs
2 packed cups baby spinach, roughly chopped
8 slices deli ham
1 jar (about 7 oz/1 cup) roasted red peppers, well drained and chopped
¼ Cup feta cheese

Preheat oven to 350. Grease 4 large (16oz) individual ramekins* with olive oil. Line ramekins with deli ham  (or if you wish to omit the ham, just grease the ramekins extra well). Divide the baby spinach and roasted red peppers evenly into the ramekins and crack 2 eggs into each. Top with about a tablespoon of feta and fresh cracked black pepper. Bake for 20-30 minutes until the egg whites are completely set.

* You could also use one large baking dish, about 10 inches in diameter, or a muffin pan (you’ll use 8 of the muffin cups with a single egg in each). Cooking time will likely increase if you use the baking dish and decrease if you use the muffin tin.
