It’s Foodie Friday! We have a quick spring side dish for you today featuring asparagus! Break out your grill because it’s just about time for fresh, local asparagus. Lemon Feta Asparagus
1 bunch asparagus, woody ends cut off
oil, for greasing grill grates (we used coconut oil)
juice of half a lemon
1/3 cup crumbled feta cheese
Preheat grill over medium. Grease grill grates using an oil soaked paper towel handled with long grill tongs. Grill asparagus, tossing once or twice, until tender and slightly charred. Remove to a serving plate and top with lemon juice and feta.
