Sesame Cucumber Salad

It’s Foodie Friday and we have an easy side dish for you today! If you’re lucky you might just find local greenhouse cucumbers at the farmers’ market. This salad comes together in just a couple of minutes and makes a great accompaniment for dishes like our kabobs or chicken skewers. You can find links to those recipes below!

Sesame Cucumber Salad

2 cucumbers, thinly sliced (we used a mandolin)
2 Tbsp olive oil
2 tsp sesame oil
1 Tbsp rice wine vinegar
2 tsp soy sauce, or more to taste
1 Tbsp sesame seeds
4 scallions, thinly sliced

Combine all ingredients and toss to coat. Serve cold for the crunchiest salad!
