It’s Foodie Friday! Today we have a super simple recipe for a delicious breakfast or snack option. Spoiler alert: you can also put it on ice cream. Blueberries are at their peak right now! Use them in this recipe to concentrate their sweetness and also enjoy the gorgeous bright pink color when you stir them into yogurt!
Easy Blueberry Lime Compote Parfait
1 pint blueberries
2 Tbsp water
zest of 1 lime
juice of half a lime
up to 1 Tbsp pure maple syrup (optional)
Greek yogurt, for serving
Combine all ingredients except maple syrup in a small sauce pan and heat over medium low. Stirring occasionally, cook for 7-10 minutes until berries burst and the mixture become syrupy. It should bubble gently.
Remove from heat and let cool. The mixture will thicken substantially and become almost jam-like. Taste and stir in up to 1 Tbsp of maple syrup if desired. Layer in a jar or glass with Greek yogurt to serve as a parfait. Extra compote would also be delicious on plain oatmeal or ice cream!
