It’s Foodie Friday! This recipe, which could also be known as Best D*mn Green Beans, will change the way you feel about green beans. Seriously. Delicious warm or at room temperature, this tasty side makes a great potluck accompaniment.
Garlicky Green Beans with Mint
1 pound green beans (we used yellow beans), ends trimmed
3 Tbsp olive oil
3 large cloves garlic, minced
1 small bunch mint, finely chopped
Pinch red pepper flakes (optional)
If you have a large skillet with a lid, use that to minimize dishes. Steam the green beans for 5-7 minutes until they are past crisp tender. You want them a little softer but still with some chew. We put ours in a large skillet with a couple of cups of water, covered with the lid, and steamed the beans over medium high. Drain.
Add olive oil to the pan and heat over medium. Add the garlic and cook 1-2 minutes until it’s starting to brown. Remove from heat. Add the green beans and toss to coat. Add salt to taste and red pepper flakes, if using, and toss again with the mint. Serve warm or at room temperature.
