Sausage Spinach Egg Bake

It’s Foodie Friday! Today we have a super easy egg bake dish for you. It’s perfect to make ahead and grab on the go for breakfast. Packed full of spinach and with a ton of flavor from the sausage, this recipe couldn’t come together any easier. If you have an oven proof skillet, it’s a one pot meal!

Sausage Spinach Egg Bake

1 pound sausage of choice (we used hot)
1 medium onion, diced
12 eggs
1 10oz container chopped frozen spinach, defrosted
1/2 tsp black pepper

Preheat oven to 350 degrees. Heat a large (12 inch) ovenproof skillet over medium and add the sausage and diced onion. Break up the sausage with a wooden spoon and stir frequently. Cook until sausage is cooked through and no longer pink. Remove pan from heat and let cool slightly.

Place defrosted spinach in the center of a clean kitchen towel and wring out to remove excess water. Crack eggs into a medium mixing bowl and whisk. Add spinach and pepper and stir until combined. Pour egg mixture on top of sausage and onion in skillet and stir until combined. Bake for 25-35 minutes until center no longer jiggles and top is slightly browned.

if you do not have an oven proof skillet, add sausage and onion to egg mixture in the medium mixing bowl and stir to combine. Spray an oven proof casserole dish (12 inch round or similar) with baking spray and pour egg and sausage mixture inside. Baking time may vary.
