It’s Foodie Friday! What’s more classic than rosemary and garlic with chicken? You won’t believe how crispy you can get these chicken thighs without frying, and the roasting technique is dead easy. You’ll want to add this one to your Sunday supper rotation.
Rosemary Garlic Roasted Chicken Thighs
4 bone in skin on chicken thighs
1/4 C olive oil
3 tsp chopped fresh rosemary
3 cloves garlic, finely minced
1/2 tsp salt
1/4 tsp finely ground black pepper
Preheat oven to 400 degrees. Line a rimmed baking sheet with foil. Mix olive oil, rosemary, garlic, salt, and pepper in a small bowl and rub the mixture all over the chicken thighs.
Roast chicken thighs, skin side down for 20 minutes. Flip, and roast for another 10-15 minutes, until the chicken reaches an internal temperature of 165 degrees. Broil for 1-3 minutes to crisp up the skin.
