It’s Foodie Friday! We can’t get enough of our Instant Pot these days! It’s so quick to whip up a meal with minimal dishes to wash. You’ll love this salsa chicken which contains super easy, basic ingredients and requires hardly any prep. It’s perfect for your make ahead meal prep day!
Instant Pot Pulled Salsa Chicken
2 Tbsp olive oil
1/2 of a large onion, sliced
3 cloves garlic, minced
1 pound boneless skinless chicken breasts
1 Cup jarred salsa
1 tsp kosher salt
Turn the Instant Pot to the saute setting. Add the olive oil and heat until shimmering. Add the onion and garlic and saute, stirring frequently, until softened and starting to brown, about 4 minutes.
Add the chicken breasts, salsa, salt, and half a cup of water. Turn the Instant Pot to the poultry setting, put the lid on, and pressure cook for 10 minutes. Place a kitchen towel over the top to prevent the steam from destroying your cabinets and quick release the pressure.
Remove the chicken to a plate and shred the meat with two forks. Serve with the sauce.
