Blueberry Oatmeal

It’s Foodie Friday! Today we have an easy breakfast recipe for you that’s ready in less than 10 minutes, start to finish. The stunning purple color is a fun morning pick-me-up that’s sure to please adults and kids alike.

Blueberry Oatmeal

Ingredients:
1 C milk of choice or water (we used unsweetened almond milk)
Pinch salt
1/2 C old fashioned oats
1/2 C blueberries (we used frozen blueberries and didn’t defrost them in advance)
1/8 tsp ground cinnamon
1/4 tsp vanilla extract
Maple syrup, to taste
Chopped, toasted nuts for serving, optional
1 scoop protein powder, optional

Bring milk or water to boil in a small saucepan. Add salt, oats, blueberries, cinnamon, and vanilla. Cook over medium heat for 5 minutes, stirring occasionally. Add in protein powder if using and maple syrup to taste. Top with chopped nuts. Serve immediately, or stir in a little extra milk or water when reheating as the oatmeal will thicken as it cools.
